I bake my Mayo Cake

I'm no Chef. I make quick meals most of the week, and rarely even cook rice. That said, I do bake. Well, I used to. Baking has always been a hobby, and then I got married and got stuck with a faulty oven and I boycotted baking altogether.

But this weekend, I got back in the game. We celebrated Husband's birthday so it was an occassion for cake! And, the first time I'd bake in our new home.

I pulled out a favourite recipe - the mayo chocolate cake. I don't know who decided on mayo for a cake, but it's a good move. I baked this cake a zillion times, and it's always a hit. Give it a go:

500ml Cake Flour
180ml Cocoa
10ml Baking Powder
15ml Barcarbonate of Soda
3 Eggs
400ml Sugar
5ml Vanilla Essence
250ml Mayonaise
330ml Water

Sieve flour, cocoa, baking powder and bicarb into a bowl. Sieve again and set aside.

Beat eggs, sugar and vanilla essence until light and fluffy. Reduce speed to low and add mayonaise.
 Add flour mixture into four additions with water, beginning and ending with flour.
Pour into cake pans and bake for 30-35 minutes at 180deg.

I put caramel, sliced banana and peppermint crisp chocolate between the two layers and topped with runny chocolate icing, peppermint crisp chocolate and a few strawberries. I suggest skipping the icing and replacing with whipped cream. This is a favourite combo in our family and it's delicious!
